Luís Pato is Bairrada's famous rebel, the man who spent a lifetime proving his rainy Atlantic region could make great wine from its own rare grapes. His old-vine white blends Bical and Cercial with Sercialinho, a variety almost nobody else grows: pear and green apple, acacia flowers, a flinty spark. Local pride, decades deep.
