This is wine the way Georgia invented it: fermented in a qvevri, a great clay vessel buried in the earth, the grape skins left in for months. The rare Kisi grape turns amber and deep: apricot and quince, tea leaf and honey, with a gentle tannic grip no ordinary white has. Eight thousand years of tradition, one glass of it.
