Bertrand Gautherot farms a few hectares in the Aube biodynamically and bottles champagne the way it grew: fermented in old barrels, aged on its lees, finished without a gram of added sugar. Blanc d'Argile means white of clay, and the wine tastes of its soil: lemon, chalk and green apple with a bread-dough depth. This is the opposite of big-brand champagne, and collectors adore it precisely for that.
