Giuseppe Cipriani invented the Bellini at Harry's Bar in Venice in 1948, naming its sunset colour after a Renaissance painter. This is that very recipe, bottled by his family: white peach purée married to gentle Italian bubbles, light in alcohol and generous in charm. Chill it well, pour it cold, and serve the easiest smile in the aperitivo world.
