This is Pinot Noir from one of Burgundy's most admired families, grown in a vineyard that touches the legendary La Tâche. The family has farmed this 1.57 hectare plot since 2005, and part of it actually extends into the land better known today as La Tâche. Expect dark cherries, roses and a whisper of spice, wrapped in a wine with real muscle under its silk.

«Dujac ferments mostly whole clusters, which gives ripe blackberry fruit with spice and smoke, and firm but supple tannins with a savoury, saline finish. It is still young: give it air, an hour in a carafe, and serve it just cool. Wine Advocate rated it 94+ and suggests patience, as it is rich, muscular and built to age.»

On arrival
Stand the bottle upright for a moment, then open it and pour into a carafe. This wine has travelled; give it a gentle start.
30 min · First taste
Pour a small glass. It may seem tight and spicy at first, that is normal for a young wine of this level. Notice the rose and cherry starting to peek out.
75 min · Opening up
Now the fruit turns darker and sweeter, and the spice softens. This is the moment to serve dinner, around 16 degrees, just cool to the touch.
150 min · Last glass
Keep one glass for after the meal. By now the wine is at its most open and silky, a glimpse of what ten more years in a cellar would bring.
