Saperavi means dye in Georgian: the grape is so dark it stains the glass, one of the few on earth with red juice inside red skin. Fermented in a buried qvevri, it goes deeper still: blackberry and black cherry over warm earth, peppery tannins with ancient confidence. The Caucasus in a glass, undiluted.
