This is red Burgundy from one of the most admired families in the region, made only from Pinot Noir grown on a famous hillside in Gevrey-Chambertin. The 2019 smells of ripe cherries, plums and roses, with a gentle touch of spice and cocoa. In the mouth it is smooth and velvety, generous but never heavy.

«Rousseau blends young vines from Charmes with old vines from neighbouring Mazoyères, and the result is the most openly charming wine in their cellar. Critics found the 2019 supple and fine boned, with velvety tannins: it drinks beautifully now and will keep improving for two decades. Pour it a little cool and let it warm in the glass.»

On arrival
Stand the bottle upright and check it feels cool, around 16 degrees. Open it gently and pour a small taste: it may seem shy at first, that is normal.

Pour it into a wide decanter or simply into large glasses. The rose and cherry perfume starts to lift; swirl slowly and just smell for a moment before drinking.

Now the wine turns silky and generous, this is the moment to serve the main course. Notice how the fruit tastes riper and the texture feels like velvet.
