Opus One was born in 1979 when Robert Mondavi of Napa and Baron Philippe de Rothschild of Bordeaux decided to make one great wine together. The 2016 comes from a calm, generous growing season and it shows: dark berries, a touch of violet and cedar, and a texture like velvet. Critics count it among the finest bottles the estate has ever released.

«This is Napa sunshine with Bordeaux manners: powerful, yes, but polished and never heavy. Give it 45 minutes in a carafe and it opens like a flower. Serve it just cool to the touch, around 17 degrees, not warm room temperature.»

On arrival
Pull the cork and pour the whole bottle into a carafe. Right now the wine is a little shy; air is what wakes it up. Pour yourself a small taste so you can watch it change.

Swirl and smell: dark cherries, blackcurrant and a hint of violets should be rising from the glass now. Check the bottle feels just cool to the touch. If it feels warm, ten minutes in the fridge does wonders.

The wine is now open, silky and generous. This is the moment to serve the main course; the first bite of beef or lamb with a sip of this is what the two founders dreamed of.

The last glass is often the best one. The fruit turns sweeter and softer, with a whisper of chocolate and cedar. Keep a piece of aged cheese nearby and take your time.
