Yquem is the only Sauternes ranked above every other sweet wine of Bordeaux, made from grapes shrivelled by a friendly fungus called noble rot that concentrates them into liquid honey. The 2021 tastes of apricot, candied orange and honeysuckle, sweet but never heavy, with a freshness that keeps you reaching for another sip. James Suckling gave it a perfect 100 points.

«2021 was a cool, tricky year, and Yquem answered with grace instead of power: 148 grams of sugar per litre that somehow feel weightless. Serve it well chilled in small glasses; a little goes a long, long way. It will live for fifty years, but it is already generous tonight.»
From the first pour to the last glass — follow it through the evening.
On arrival
Place the bottle in the fridge, or better, in an ice bucket with water for 25 minutes. Yquem shines at about 10 degrees: cold enough to feel fresh, warm enough to smell everything.
30 min · First pour
Pour just a third of a glass. Smell first: apricot, honey, orange blossom. Then a small sip, and let it sit on your tongue a moment. Notice how sweet it is, yet how clean the finish feels.
60 min · One hour in
As the glass warms slightly, new scents appear: candied ginger, vanilla, a hint of crème brûlée. This is why great Sauternes is never rushed. Try it now beside cheese or dessert.
120 min · The last glass
If any wine remains, recork it and keep it in the fridge: it will stay beautiful for a week or more. Few wines forgive patience so generously. Tonight's last sip may be the best one.
