Dassai 23 is named for its number: each grain of Yamada Nishiki rice is polished until only 23 percent remains, the outer layers ground away over days to reach the pure heart. What survives is astonishing: lychee and pear, a rose whisper, texture like cool silk, and a finish of complete calm. One of the most celebrated sakes on earth, best drunk slightly chilled and very slowly.
