What Is Mochi Ice Cream

Mochi (餅) is a traditional Japanese rice cake made by pounding sticky rice into a soft, slightly chewy dough. Mochi ice cream wraps that dough around a frozen ice cream centre — the dough stays just slightly chewy at low temperature while the ice cream remains creamy. The result is a perfect single-bite dessert.
